Filter Single/Multiple Select in Forms

Would like to be able to customize the specific single select or multiple select options in the field in forms.
As an example, if there are five different options in the field, we want to be able to hide one or more of the five options.
In our case, we offer different size shirt options. As shirt sizes are no longer available, we want to remove that shirt size as an option. Currently, we would have to delete the single select option from the app in order to remove that option from the available options, which then deletes the same option on the results page.

I have a drop down that we keep changing the values - I dont want to have a long list of entries after a few month but I cant delete those values or else I wouldnt have that information stored anymore on my old records. There should be an option to disable drop down values and not display it, while retaining all previous record information.
